turkey meatloaf sandwiches . . .

I was flipping through my February issue of Real Simple magazine, when I came across a list of dishes.  And I wondered why.  Why have we been racking our brains to come up with weekly and/or monthly menus . . . when someone has already done it for us.  ??? 

And that's like, their job.  So they have to keep it varied and interesting and delicious . . . and as an added bonus, healthy.  Right?  So.  Cool!

Jamie had a looksee at the Real Simple website this weekend and found some enticing recipes that he plans to try.  There are lots of good looking meals featured on the site.  Check them out when you get a chance!

The first dish Jamie made was the Turkey Meat Loaf with Mashed Pots.  Now I'm not a fan of turkey, but I honestly didn't even realize I had eaten turkey until I was finished and we were talking about the recipe.  I LOVED how the loaf also contained 4 cups of chopped up spinach, because we've been trying to figure out how to sneak some leafy greens into the kids' diet.

That was the best meat loaf I've ever had.  Seriously.  It was scrumptious, and the kids scarfed it down.  So I know they'll enjoy their meatloaf sandwiches at lunch today!

I did make one change from the recipe. The recipe on the Real Simple website would have you just chop the onions and spinach and add them raw. I've never liked raw veggies in my meatloaf, so I sauteed the onions down until they were golden, and then wilted the spinach in the pan for about a minute. I also added two cloves of chopped garlic and cooked them for about thirty seconds. Then I threw all of that into the food processor to chop it up really fine. After letting the mixture cool for a few minutes, I combined all the ingredients and continued on as the recipe directed.

When you slice the meatload it looks beautiful with the specks of chopped spinach throughout, but if you're trying to hide the spinach from kiddos, just paint the slice with your tomato sauce mixture before serving, and they'll probably never notice it.
